Besides the laborious task of grating the carrot, this is such an easy cake to whip up. It’s as easy as mixing the dry with the wet ingredients. It’s amazing how this leaves you with a great-tasting cake. This cake is very moist and melts in your mouth.
- 1 1/2 cups flour
- 1/2 to 3/4 cup brown sugar (depending on how sweet you want it to be)
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 1/2 tsp cinnamon
- 1/2 tsp ginger powder
- 1/4 tsp salt
- 1 cup finely grated carrot
- 3/4 cup water
- 1/2 cup melted butter
- 2 tsp vanilla essence
- 60 gm chopped almonds
- 50 gm black raisins
- Preheat oven to 175 degrees Celcius.
- Butter and line a 9-inch baking pan.
- Mix a little of the flour with the raisins.
- Mix the dry ingredients and spices until well blended.
- Add grated carrots. Stir until thoroughly blended.
- Add the wet ingredients and mix thoroughly.
- Bake for about 30 to 45 minutes, or until toothpick inserted comes out clean.
